Dave!Last year I made five new year resolutions for 2009. I accomplished them all by February 9th.

Perhaps I set my sights too low. More likely I was just trying to be realistic in my goals. But whatever the case, after I fulfilled my resolutions I pretty much coasted for eleven months. Mission accomplished! This year I'm not going to let myself off so easy. Instead of giving myself a list of fixed goals that can be checked off, I'm instead going to commit to more general goals that don't have a finish line I can cross. Things that keep me growing and learning.

Like figuring out how to make the world's best grilled cheese sandwich.

Hey, there's always room for improvement... even when you've got a spectacular recipe already under your belt.

Superior cheeses come along.

Tastier breads.

Improved grilling technology.

All you can really do is create the world's best grilled cheese sandwich for the moment and move on to the next one. Sure that's a lot of cheese, but it's the journey (endless grilled cheese sandwiches)... not the destination (heart failure from high cholesterol levels)... that's important here.

Time to cut the cheese.

    Accomplished your resolutions!
    Not necessarily setting your sights too low… most people set them wayyyyy to high and end up sorely disappointed.
    It’s a success. 🙂

    And your Grilled Cheese Panini sounds wonderfull! Herbed Cream cheese is a different take on it, probably a nice addition to the provolone and cheddar.

    I hope your New Year is a nice one for you.

      If you can find cheeses that have a rich flavor to them, then the herbed cream cheese probably wouldn’t be necessary. I kind of like it though. The trick is to find herbed cream cheese that won’t overpower the cheese. Garlic, for example, buries the cheese flavor.

    Here I thought that this will be the day of the new year that I start eating healthy, cutting calories, and focusing on NOT eating so much cheese, bread, and more specifically, grilled cheese sandwiches, which I totally had an torrid love affair with in 2009.

    I highly recommend the Cuisinart Griddler for excellent grilling action. It has the weight for a proper smoosh, removable plates for easy washing, and the flat plates are great for pancakes. Plus it makes the pretty grill marks on the bread. Awesomeness ensues

    Like cheese, butter is my journey that has a similar destination. But I enjoy the ride, each and every cube of it.

    Now I want a grilled cheese sandwich today.

    If you’ve never tried pimento cheese on your grilled cheese sammy, I highly recommend it. I want one right now!

    Mmmmmm…. now I really want a grilled cheese!
    I make mine with just a touch of mustard. It seriously changes the whole sandwich.

    My parents both make excellent though simple grilled cheese sandwiches. I grew up dipping them in ketchup but have long since switched to dipping into mustard. Unless it’s served with tomato soup in which case the soup wins out for dipping. Even went through a phase of making them with a slice of tomato in the sandwich. I like it all!

  13. Second year in a row with no resolutions for me. I never stick to them anyway so I decided last year to not bother. Happier for it actually.
